Dear Customers, I will be adding a series of recipes with acknowledgement to those who contributed. These recipes are contributed by Priya from Nisarga. Many thanks and acknowledgement to her inspiring recipes.

Kodo millet bath pictures:

Millet rice:
Cooking time 30mins
Ingredients:
Vegetables:
Moringa leaves 1 bundle
Red cap 1/2
Yellow cap 1/2
Yellow tomato 100g
Coriander garnishing.
Cashews optional
Oil 10 ml sesoning
Kodo/foxtail/little millet
1 cup
Water 2 cups
Chilly powder 1 ts
Cumin 1ts
Mustard 1ts
Turmeric 1/2 ts
Method:
Keep 1 cup of millet and 2 cups of water and pressure cook it for 3 or 4 whistles.
Allow it to cool.
In the mean time
Heat oil in a pan and use mustard,cumin, turmeric powder .
Stir it and add Moringa leaves and mix well .
Once the leaves are cooked add other veggies.
Once the veggies are cooked add chilly powder and salt.
Mix it for few mins in a low flame.
Add 1 ts of ghee for taste!!
Finally add cooked millet.
Curd and this rice is a great combination.
This is highly nutritious food with more fibre protein calcium.

Beaten Red rice sweet pongal :

Sweet made out of Red beaten rice and jaggery.

3 cups of Red beaten rice
2.5 cups of jaggery powder
1 cup of milk optional
1 cup of ripened banana
1 cup of grated fresh coconut.
Cardamom 5pcs
Ghee 10g optional
Preparation time :
15 mins
Method:
Wash the beaten rice and soak in 1 cup of water till it becomes soft.
Hard beaten rice will take little more time to become soft.
Cut banana into small pieces.
Add jaggery powder and mix well.
Add coconut And banana and mix well.
Add cardamom powder ,ghee and milk.
This dish is so delicious and wholesome.

Healthy Amla Rice:

It tastes good with white rice.
Amla Rice

Ingredients;
Sona Masuri rice 3 cups:
Amla pulp : 50g or more.
Peanut roasted 50g
Roasted Sesame powder optional 1 ts
Cooking oil 10ml
Mustard 1 ts
Methi 1/2 ts dry roasted
Chilly powder 1 ts
Turmeric powder 1/2 ts
Jaggery for taste 1/2 ts
Salt to taste:
Rice to prepare:
Rice 3 cups water 5.5 cups
Pressure cook it for 3 whistles.
Take out the Amla pulp using mixer or. Stone grinder.by separating seeds.
Powder sesame and methi and keep aside.
Heat oil in a pan and use mustard chilly powder and turmeric powder and mix well.
Add pulp at this stage.
Add powdered ingredients again mix well.
Add jaggery powder and stir well.
Add salt to taste .
Cook it for 2 mins.
Mix this chutney with the rice already prepared!
Garnish with roasted peanuts and curry leaves..

Bottle Gourd Halwa :-

Recipe :
Skin peeled tender grated bottle gourd 4 cups.
Brown sugar/ Jaggery
1 cup
Turmeric for colour
Clove 3 pcs
Cardamom 3
Raising 10g
Cashews 10g
Ghee optional 1 TS
Roasted rava 10g
MEthod of preparation:
1..Cook grated bottle gourd on flame using ghee or olive oil or any veg oil on low flame
2.Cover the lid .
Stir the mix every 2 mins.
When it is half cooked add sugar.Sprinkle water if needed.
Let it cook for 3 mins.
3.Add roasted rava .
Garnish with dry fruits and cardamom powder.
